My client Dawn was selling her home and downsizing to a co-op. Her mom was gravely ill and could not really eat anything. I told Dawn I would make her my famous chicken soup. I sent over a large pot of soup and her mom loved it. As a matter of fact, I made it for the last six weeks of her life. Dawn was so thankful that her mom could eat something that she named my soup “Angel soup.” I always prepare soup for anyone who is ill. Chicken Soup definitely heals the soul. Try this recipe and “pay it forward” to anyone you know who is sick. It will make a world of difference.
→ 2 chicken breasts and 2 thighs
→ ½ cup diced onion
→ ½ cup diced fennel
→ ¾ cup diced carrots
→ ¼ cup diced celery
→ 1 clove garlic
→ ¼ cup chopped parsley
→ ½ teaspoon salt
→ ¼ teaspoon pepper
→ 2 tablespoons grated Parmesan cheese
→ ¼ teaspoon fresh lemon juice
→ 3 cups water
→ 6 cups chicken broth
→ 1. Heat oil in pot and sauté onion, fennel and celery, cooking until translucent.
→ 2. Season the chicken with salt and pepper and place skin side down in pot, browning 3 to 4 minutes.
→ 3. Add carrots, cheese, garlic, salt and pepper, lemon juice, water and chicken broth and cover with a lid.
→ 4. Simmer 1 to 1 and ½ hours. When the chicken falls of the bone, it is done. Let the soup cool.
→ 5. Take out the chicken and shred it into small pieces. Put the chicken back into the pot and add parsley and rice or noodles.
