Now that fall has arrived, what better way to warm up on a chilly day than with pumpkin spice popovers?
While few restaurants make them anymore, I can remember going to Patsy’s in New York City as a child and ordering them with chicken soup. You can serve them for breakfast, lunch or as a side to dinner. There’s nothing better.
INGREDIENTS:
→ 3 large eggs
→ 1 cup milk
→ 3 tablespoons melted unsalted butter
→ 1 cup flour
→ 1 ¼ teaspoons pumpkin pie spice
→ ½ teaspoon salt
→ ¼ teaspoon cinnamon sugar
DIRECTIONS:
→ 1. Preheat oven to 375 degrees.
→ 2. Combine eggs, milk, butter and flour. Mix well.
→ 3. Add pumpkin spice, cinnamon, sugar, salt and blend until smooth.
→ 4. Generously grease a popover pan (holds 6 popovers).
→ 5. Pour mixture into popover pan and fill each cup half way.
→ 6. Bake 45-50 minutes.
→ 7. Serve hot immediately.
OPTIONAL: Dust with confectioner’s sugar when done.
