On a low-carb diet? These zucchini bites hit the spot. I recently made them for Super Bowl Sunday. I turned around and the entire tray was gone.

INGREDIENTS:
→ 3 large zucchini sliced into ¼-inch rounds
→ 1/3 cup shredded mozzarella
→ 1/3 cup marinara sauce
→ Pepper to taste
→ 1 teaspoon dried oregano
→ 2 tablespoons olive oil
DIRECTIONS
→ 1. Preheat oven to 400 degrees.
→ 2. Place zucchini on baking sheet and brush with olive oil.
→ 3. Bake 5 minutes.
→ 4. Take out zucchini and spoon a thin layer of sauce onto each slice and top with mozzarella.
→ 5. Sprinkle dried oregano and pepper on top and bake until cheese is melted, about 10 minutes.
